Hibachi Fried Rice with Yum Yum Sauce Recipe
Ingredients:
For the Hibachi Fried Rice:
2 cups cooked white rice (preferably day-old)
2 tablespoons vegetable oil or butter
1 small onion, finely chopped
2 cloves garlic, minced
1 cup mixed vegetables (peas, carrots, corn)
2 large eggs
3 tablespoons soy sauce
1 tablespoon sesame oil
2 green onions, chopped
Salt and pepper to taste
Optional: cooked chicken, shrimp, or beef
For the Yum Yum Sauce:
1 cup mayonnaise
1 tablespoon tomato paste or ketchup
1 tablespoon melted butter
1 tablespoon rice vinegar
1 tablespoon sugar
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1-2 tablespoons water (to thin, if needed)
Instructions:
Step 1: Yum Yum Sauce:
• Prepare the Sauce:In a bowl, combine the mayonnaise, tomato paste or ketchup, melted butter, rice vinegar, sugar, garlic powder, smoked paprika, and onion powder.
• Mix until smooth. Add water a little at a time if you want to thin the sauce to your desired consistency.
• Cover and refrigerate the sauce for at least 30 minutes to let the flavors meld.
Step 2: Hibachi Fried Rice:
• Prepare the Rice:If you don't have day-old rice, cook 2 cups of white rice and let it cool completely.
• Cook the Eggs:Heat 1 tablespoon of vegetable oil or butter in a large skillet or wok over medium-high heat.
• Beat the eggs in a bowl and pour them into the skillet. Scramble the eggs until fully cooked. Remove from the skillet and set aside.
Step 3: Sauté the Vegetables:
• In the same skillet, add another tablespoon of oil or butter.
• Add the chopped onion and cook until it becomes translucent.
• Add the minced garlic and mixed vegetables, and cook for another 2-3 minutes until the vegetables are tender.
Step 4: Add the Rice:
• Increase the heat to high and add the cooked rice to the skillet.
•Stir-fry the rice, breaking up any clumps, for about 5 minutes until it’s heated through and slightly crispy.
Step 5: Season the Rice:
• Add the soy sauce and sesame oil, and mix well to ensure the rice is evenly coated.
• Return the scrambled eggs to the skillet and mix them into the rice.
• Add the chopped green onions and cook for another minute.
Step 6: Add Protein (Optional):
• If you are adding cooked chicken, shrimp, or beef, mix them into the rice at this stage and heat through.
• Season and Serve:Taste the rice and add salt and pepper as needed.
• Serve the hibachi fried rice hot with a generous drizzle of yum yum sauce on top or on the side.
